JATIMTIMES Kabupaten Tulungagung , Jawa Timur punya banyak kuliner enak. Mulai dari nasi ayam lodho hingga kopi ijo. Selain itu, ada juga ada kuliner khas Tulungagung, sompil namanya. Sompil menjadi salah satu menu kuliner legendaris warisan Mataraman yang tersaji di Kabupaten Tulungagung. Menariknya, sajian sompil ini sering dijual di pagi hari bebarengan dengan warung-warung pecel ketika sarapan.
Sompil biasanya disajikan dengan alas daun pisang sehingga menimbulkan aroma harum cita rasa yang khas. Komposisi kuliner sompil biasanya disajikan dengan sayur nangka muda, kacang panjang, dan kacang kedelai lengkap dengan urap-urap parutan kelapa muda yang pedas. Lauk pelengkap sompil biasanya cocok dengan ikan asin atau kerupuk, bisa juga ditambahkan telur atau suwiran ayam.

Meski terkesan sederhana, sompil memiliki paduan cita rasa sayur yang komplit dengan sensasi pedas sayur lodeh. Kelembutan sompil juga bisa dinikmati karena disajikan dengan lontong.
Taburan serbuk kedelai juga menjadi ciri khas utama kuliner sompil khas Tulungagung. Bubuk kedelai tersebut dibuat dengan cara disangrai hingga matang kurang lebih 1-2 jam.
